Carnitas La Esperanza
Acapulco has three Carnitas La Esperanza to choose from: One in Gran Plaza, one on the street connecting the Costera to Cuahutémoc on the west side of Parque Papagayo, and one in Costa Azul on the glorieta. Carnitas La Esperanza also delivers to residences. Their specialty is the pork "carnita," which comes from the state of Michoacán. Special cuts of pork are seasoned and slow-roasted for many hours and basted before being flash roasted at high heat for a few minutes, to produce a portion that is crisp to the teeth on the outside and soft inside. Beef and lamb are also prepared this way, and carnitas can be served by themselves or as ingredients in tacos, tortas, tamales and burritos. All the garnishes and sauces are provided: cilantro, onion, guacamole, beans, lemons and radishes. Carnitas Esperanza also serves "gorditas," which are deep fried corn meal popovers with chicarrón (pork rinds) in the middle. Soup, rice tortillas and deserts are also offered.
