Baikal
Baikal is a sophisticated, fashionable, upscale refuge for the urban glitterati. The entrance at the parking level quickly leads down a spiral stair to the bar and reception area. The center of attention in the vaulted dining room is the majestic view of Acapulco Bay, seen through floor-to-ceiling windows. Colors in the dining room are a muted "white on crème" and very elegant. From time to time drop down movie screens show videos, mainly with ocean themes or on old Acapulco. Otherwise, bossa nova and cool jazz provide the background, often with live performers. The menu changes often, and provides a small selection of fusion dishes, including some that merge Mexican with Asian and continental. Presentation is very important to the executive chef, and all the dishes are pleasing to the eye. Examples of the inventiveness of Baikal are the sliced abalone in chipotle vinaigrette, the cucumber vichyssoise with mint and jalapeño and the red snapper in a sauce of lobster-butter. Beef, chicken and/or lamb options are usually offered on the menu. Upon arrival, look for the champagne cart to arrive, offering even Dom Perignon by the glass.
